Q.: What is herbes de Provence?

A.: Herbes de Provence is a blend of herbs that originated in the French region of Provence. Historically, cooks of the region would season their food with a similar blend of herbs, which over time came to be known as the herbs of Provence or herbes de Provence in French.
You can easily find this blend in the spice aisle of most grocery stores.
Because the term is not proprietary, however, the blend of herbs will vary among spice purveyors.
Typically, the mixture contains savory, fennel or tarragon, basil, sage, thyme, rosemary, marjoram and often culinary lavender.
Here is a recipe for making the blend at home.
HERBES DE PROVENCE
3 tbsp. dried tarragon leaves
1½ tbsp. dried savory leaves
1 tbsp. dried sage leaves
1 tbsp. dried thyme leaves
1 tbsp. dried lavender buds
1 tbsp. dried marjoram leaves
Combine herbs, rubbing any whole leaves between fingers to crush them. Herb blend will keep, in an airtight container, for up to 6 months.
Makes about ½ cup.
