Ask Lisa: What’s the difference between heavy cream and whipping cream?

Q.: What is the difference between heavy cream and whipping cream?

— Shirley Williams, Akron

A.: The difference between the two is the amount of milk fat in each. Whipping cream or light whipping cream as it is often labeled, is 30 percent to 36 percent milk fat, while heavy cream is 36 percent or more milk fat.

Both should work fine for making whipped cream.

Stick to heavy cream when making rich, decadent desserts like chocolate mousse. When it comes to making soups and sauces creamy, light whipping cream will work fine.
