SOUR CREAM CUCUMBER SALAD
2 large cucumbers, peeled and sliced thinly
1 large onion, sliced into thin rings
¾ cup sour cream or low-fat sour cream
3 tbsp. cider vinegar
2 tbsp. sugar
2 tbsp. chopped fresh dill
Salt and pepper to taste
In a bowl, combine the cucumbers and onion. Combine remaining ingredients and pour over cucumbers. Mix well. Chill several hours before serving.
Makes 6 to 8 servings.
