Q.: The recipe for the German Potato Salad in a recent paper sounds wonderful. I’ve only ever had the stuff in the can from the grocery store, so I am tempted to make it from scratch. I was wondering if I could can it? I would never be able to eat all that the recipe makes before it spoils. I can produce from my garden, so I thought I’d try canning the potato salad. Your opinion, please?

A.: Linnette Goard, a home food preservation specialist with the Ohio State University Extension, said German potato salad, while available in cans commercially, is not something that can be safely canned at home.
