Here is a sampling of the name changes to cuts of beef and pork that soon will hit meat cases. The old name is listed first, then the new name:
Beef
• Boneless beef loin hanging tender/Hanger steak
• Beef chuck for stew/Stew meat
• Boneless beef chuck eye edge pot roast/Denver roast
• Beef shoulder top blade steak boneless flat iron/Flat iron steak
• Beef plate skirt outside steak/Skirt steak
Pork
• Boston roast (sometimes called pork butt or Boston butt)/Blade roast
• Rib chop/Pork ribeye chop
• Rib chop center/Pork ribeye chop, bone-in
• Loin chop/Pork porterhouse chop
• Top loin chop/Pork New York chop
